WHere is a simplified interpretation of a drink featured on the seasonal menu. It's a party-sized pre-mixed that is bursting with tastes of the holiday season, rendering it excellent for your celebration. Reserve the remaining cordial for brunch beverages, puddings, or to make another batch of the drink.

Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put every items into a pot, heat until it reaches a gentle boil, stirring until the sugar dissolves. After that, remove from the burner and leave to cool down completely. Transfer into a sealable bottle, close it keeping it chilled, it will last for about one month.
To make Premix: Combine all the liquids in a sizeable container, leave to sit for an hour, then strain , ideally through a fine cloth, so it's fully clarified.
For serving: Add 85ml of the batch mix to a cocktail shaker packed with ice, and stir gently for about 60 seconds until cold. Pour into an cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a brief mist of mandarin oil over the top.
